In April of 2016, my wife Caroline and I took off on a week long journey around the legendary ring road of Iceland. We landed in Reykjavik and after a warm airport coffee at Joe & The Juice we headed into the arctic. Over the course of seven incredible days, we got caught in a blinding snow storm, marveled upwards at the northern lights and got to know the incredibly warm people of Iceland.
